Every time it's name came up in conversation I would remind myself to pick up a copy…and then promptly forget. The The Tassajara Bread Book has totally changed the way I think about bread. This recipe comes out of the Tassajara Bread Book (thank you Alex for getting me this a few years back) - it is THE BIBLE FOR BREAD MAKING. Thanks for the cookbook review. When we both lived in Salinas, we used to bake together from The Tassajara Bread Book, by Edward Espe Brown. We both have kept our original copies, which are well worn from lots of baking. The Tassajara Bread book was in my awareness for years before I bought it. I wanted to add – an Argentine baker tipped me off to the Tassajara Bread book while I was WWOOFing at his place. I cannot praise this book enough. I've used this book so often that it has the look of an old schoolbook handed from one generation to the next. The Tassajara Bread Book For some reason, I stood in front of the overstuffed shelf of tomes regarding food, I saw one small old and sad looking thing stuck between two much larger books. Beginning with The Tassajara Bread Book in 1970 Edward Espe Brown has been teaching and inspiring cooks and bakers to realize their capacity to nourish themselves and others with their labors in the kitchen. I received it as a Christmas gift, and every second Friday I take it out to make a new two loaves of bread.
